He may look like the singer from a postmodern punk band, but chef David Muñoz holds three Michelin stars for his restaurant DiverXO in Madrid, and is on his way to London this summer. Occupying a prime piece of Mayfair real estate, StreetXO will bring his Spanish street-food concept to the capital with a rolling menu of 12-14 tapas-style sharing plates shot through with ideas and influences gleaned from the chef’s travels around the globe – although all eyes are likely to be on the specials trolley, which will circulate the dining room with one-off gastronomic creations. Also expect an interactive layout, with a large U-shaped bar containing two kitchen islands, allowing chefs to connect directly with diners. StreetXO is scheduled to open 14 hours each day, and Muñoz plans to be in residence at least two days a week.
