The Aqua Group’s second sky-high restaurant in the Shard takes inspiration from the company’s Michelin-starred Hutong in Hong Kong. Northern China is the gastronomic compass point, though anyone looking for regional oddities may be disappointed – instead, the kitchen deals in unchallenging dishes for special occasions, at unrepentant special-occasion prices: weighing in at £58, the ‘glorious’ Peking duck (carved tableside and served in two stages) is a guaranteed conversation stopper. Luxe dim sum grab the limelight at lunchtime (think baked pork puffs in chinkiang vinegar sauce), while the carte promises the likes of ‘red lantern’ (soft-shell crab with Szechuan dried chilli), crispy deboned lamb ribs and, less impressively, an overly astringent assembly of chilled sliced scallops with pomelo segments. Hutong also wows the crowds with its spectacular views, superb bar, dark latticework interiors and ‘sultry Sex and The City vibe’.
