With a culinary empire stretching from Las Vegas to Singapore, Austrian-born Wolfgang Puck has added London to his conquests with Cut – an outpost of a US steakhouse brand that mixes the glossy,
cosseting opulence of a new Lexus with fastidiously sourced produce. Prime beef is the kitchen’s heartbeat & the menu is big on top cuts from international sources, grilled over hardwood &
charcoal then blasted in an American-style broiler. The results may lack that primal, lip-smacking quality, but Cut really scores with its brilliant sides & non-steak offerings such as
faultless Dover sole meunière with preserved lemon & parsley; desserts are also all you’d hope for in a high-class American eatery. It’s undoubtedly very expensive, but if your pockets are deep
enough, this is a tremendously fun import based on the sort of professionalism & can-do cheerfulness that Brits associate with US eateries. Terrific calorific breakfasts, too.
WINE LIST: Featuring the best line-up of Californian talent since Ocean’s Eleven, Cut’s list champions the best from the West Coast, with some of its finest producers on show, including
Harlan, Ridge & Stag’s Leap. Burgundy & Bordeaux also feature heavily, as does Champagne, & there are more than 40 wines available in magnum. Don’t expect much below £40, however – this
is not the place to go bargain hunting. BEST BUY WHITE 2008 Qupé, Marsanne, Central Coast, California, USA, £54. BEST BUY RED 2009 Clos de los Siete, Mendoza, Argentina, £40.

This has been quite spectacular and very much what one would hope 'top quintile' would be able to deliver. Going into the event, no one had expected this magnitude of "underpromise/overdeliver". Where to begin? Ambience is surely worthy of first mention, and 'reassuringly expensive' rings in the ear.
