 “One to remember”, Tom Kitchin’s highly regarded Michelin-starred restaurant on Leith’s reenergised waterfront comes complete with lots of attractive features, including a whisky snug and a temperature-controlled wine cellar – not to mention views of the kitchen from a specially designed window.

Inside, there are hints of Scotland’s heritage - think tartans, sheepskins and silver birch – but for the most part, this is a cool and modern dining room, completed by exposed grey brick, comfy chairs in shades of duck egg blue, and studded velvet banquettes. There are also a variety of menus to choose from, at prices which are fair considering the standard on show here. You can enjoy the à la carte at dinner, alongside a timely ‘chef’s celebration of the season’ menu, while a ‘chef’s surprise tasting menu’ comprises of seven delicious courses chosen by the kitchen team. If you’re visiting earlier in the day, there’s a great value three-course lunch, with a vegetarian alternative also available.

When it comes to the food here, Tom Kitchin’s highly distinctive cooking is still founded on seasonal produce from regional growers, producers and fishermen. ‘From nature to plate’ is the mantra, and that translates into clever, complex ideas “presented with flair and wit”:  a ‘rockpool’ of local seafood, sea vegetables, ginger and Newhaven crab consommé; boned and rolled pig’s head and langoustine tail with crispy pig’s ear salad; stuffed saddle of Highland lamb with braised shoulder, a salad of raw vegetables from Ken Holland Farm and black olives.

To conclude, consider one of the delectable fruit-based desserts such as Calvados crêpe filled with apple mousse and topped with a Granny Smith apple sorbet, but don’t ignore Kitchin’s “melt-in-the-mouth delicious” soufflés. The cosy dining room creates just the right mood, value for money is seldom in doubt, and visitors appreciate the chef’s personal touch as he greets everyone individually in the bar.

From nature to plate

Many restaurants may claim that they operate a nature to plate philosophy, but few do it with as much passion and commitment as the Kitchin. Based on a recent visit, the Kitchin fully deserves its Michelin star, which it has held since 2007. Located in the redeveloped Leith waterfront area, just on the edge of Edinburgh, the venue both looks and feels distinctly modern but still manages successfully to show reverence for the past. My pre-dinner cocktail, enjoyed in the light and airy bar at the front of the venue, perhaps set the scene and tells you a lot about what the Kitchin is trying to achieve. For the uninitiated, a ‘Timorous Beastie’ is a house concoction combining a 12-year whisky, amontillado sherry and bitters. Not only is whisky one of the country’s most famous exports, but so is Robert Burns, author of the poem in which the aforementioned Beastie features. The traditional made modern. Comfortably libated, my comrade and I progressed into the dining area, a beautiful space. The open and spacious kitchen stands at one end, in full view of diners. They can take in the action, while admiring the muted shades of light blue décor adorning the room, which are combined with granite and birch features, again nods to the country’s heritage. We both opted for the tasting menus, as ever omnivorous for me and vegetation for my comrade. Back to the venue’s philosophy and dishes such as razor clams from Barra, halibut from the North Sea and roe deer from the Borders spoke clearly of localism. Beyond this, there is a distinct emphasis on seasonality, with first-of-the-season asparagus featuring on both mine and my comrade’s menu (the former paired with oxtail). Such is the passion of Tom Kitchin and his team that every diner gets a map of Scotland where they can see exactly from exactly where each ingredient comes – a nice touch. We were generally very pleased with what we ate across the menu, with the clams and the venison being my favourites, while my comrade rated her sea kale (a definite novelty) and artichoke dishes. Service was also hard to fault, with most dishes introduced and explained in a passionate manner. If there were a failing, then it was perhaps the wines. Sure, the main list is impressive, but some of the pairings we got with our dishes spoke of pedestrianism, especially the choice of an entry-level young Musar (a cult Lebanese wine) with the clams. Still, at £150/head all-in for a seven-course food and wine tasting menu, the Kitchin has to rank as among the better value experiences of this nature in Britain. One to recommend.

Spectacular date night - what an amazing experience
One to remember - I have wanted to eat here for years and it certainly did not disappoint. My other half and I had the most amazing evening drinking fabulous Scottish g&t's, great wine, and the most sensational food. Icing on the cake was meeting Tom too. I had the venison and it was so tender and flavoursome. Although - having a sweet tooth - my favourite course would have to be dessert. You must order the souffle - it was melt in the mouth delicious. Cannot recommend it enough for a special occasion, romantic night or restaurant during a weekend away in Edinburgh.

Isn't it just wonderful when you can't find one single thing that would have made your dining experience better… That was the case when my son and I visited The Kitchin to celebrate his 40th birthday. Cocktails in the sunshine set the tone for two and a half hours of sheer delight. We chose the lunch menu of the day. Each course, exquisitely presented, was greeted with “OOhs and Ahs” when tasted (reminiscent of a scene from “When Harry Met Sally”!! We chose to have a wine package which gave us a different wine with each course. The wines were superb and served and described beautifully, adding to the whole experience. The overall level of service was was spot on and unobtrusive. While its the most expensive meal I have ever had (taking the drinks into account), it was absolutely worth every penny. A superb venue to celebrate a special occasion.
