Built on the site of a mill complex that was mentioned in the Domesday Book, The Priest House is surprisingly modern for such a historic setting – although you can still see the original Norman
tower and water wheels by the river Trent. The whole place is now a country-house hotel with a formal restaurant serving highly worked contemporary food in atmospheric surrounds. Starters of
pan-roast scallops with confit pork belly, pear purée and pink peppercorn vinaigrette could be followed by guinea fowl with thyme and marjoram crumble, confit garlic and pancetta. Veggies have
their own ‘green menu’, while desserts are showy offerings such as dark chocolate parfait with a pistachio cylinder, chocolate ‘soil’ and pistachio cake. Simpler food is also available in the
hotel’s brasserie and bar. It may be secluded, but the Priest House is only four miles from East Midlands Airport.
