Given whisky’s profile with its well-heeled international clientele, the sumptuous new signature bar at Edinburgh’s most prestigious hotel has set out its stall with the largest collection of
Scottish ‘uisge beatha’ available to the general public in the capital. There are over 400 blended, malt and vintage tipples on sale here, including some rarities from Speyside, Islay, Campbeltown,
the Highlands and the Lowlands dating back as far as 1940 – although the most expensive is a 25ml dram of Dalmore Constellation from 1992, which will set you back £125. Although the bar is
primarily about drinking, you can also nibble smoked almonds, wild boar salami and dark Swiss chocolate with your chosen tipple. Otherwise, book a table at Hadrian's Brasserie or splash out on a meal at Number One – the
hotel’s Michelin-starred flagship restaurant.
