Founded in Milan in 1979, the Panino Giusto brand now has a City outpost in the grand Royal Exchange Buildings. Like its siblings in Italy (and Japan), this venue is all about panini – special ‘sandwiches’ assembled according to a clearly defined ‘rule of seven’: 70g of freshly sliced meat, 70g of cheese, and 70g of French bread, with vegetables, sauces and oil. Around 15 versions are available, from Washington (Parma ham, goats’ cheese, black olive pâté and tomato) to sogno (Bologna sausage, pistachios, brie and Alba truffle oil). Panino’s all-day offer kicks off with three riffs on breakfast, while lunch is fleshed out with antipasti, salads and secondi including Fassona burgers, lamb chops with balsamic jelly or smoked swordfish with fennel. Home-baked cakes, pastries and ice creams provide the sweetness, while drinks bring regional Italian wines, Poretti beers and classic aperitifs.
