Transplanting Shaun Rankin’s acclaimed cooking into a super-slick brasserie, Ormer is Jersey’s only restaurant to offer top-flight dining in informal surroundings. The mustard leather chairs, glistening copper-coloured bar and parquet floors of Martin Brudnizki’s design are smart yet unstuffy – as are the totally professional staff. Likewise, premium Jersey ingredients are presented in simple but inventive form. Dover sole arrives filleted and crumbed with peas, mash, mussels and confit egg yolk; turbot is cloaked in pine-nut crust, with samphire, cauliflower salad and purée; and duck breast comes with buckwheat, salted beetroot, celeriac and a pistachio crumb. Although the carte is pricey, set lunch (£19/£25 for two/three courses) is a steal (think cod with lentils, chorizo, and smoked-potato foam), as are the mind-blowingly good Royal Bay oysters in the bar. Add an impressive wine list and a first-floor roof garden with cigar lounge, and you have Jersey’s premier business-dining destination by far.
