Two years after winning MasterChef, American-born Tim Anderson is putting the finishing touches to his first restaurant – a Japanese eatery specialising in the regional cuisine of Kyushu
Island, where he lived for two years. The name means ‘southern barbarian’ (a term once used to describe European settlers) and the cooking is all about ‘dirty’ flavours, with lots of pork and
