Food-wise, pride of place goes to Chambers Restaurant – a sleek, modernist dining room with high, oak-framed windows, specially designed ‘candle lanterns’ and a full-length banquette dominating the
space. The menu mixes accessible British and European flavours, so expect the likes of Dorset crab salad or foie gras and ham hock terrine followed by Lancashire hotpot with butter beans, chicken
‘three ways’ with rösti or wild black bream with shellfish linguine. To finish, try steamed orange pudding with orange custard or banana crème brûlée. The adjoining bar/lounge provides drinks and
snacks in a setting of slatted walls, dark metallic surfaces and wingback chairs.
