An adjunct to The Don’s smart new bistro sibling, this spacious ground-floor bar is a another cosy cork-walled charmer. Sip Sandeman’s award-winning sherries and port with a plate of Bellota jamón
carved from the bone, or order something by the glass from the restaurant’s prodigious 18th-century cellars. Top-notch Tempranillo and Pena das Donas Almalarga (an elegant, mineral-rich white from
Galicia) are as fine a treat as a tenner can buy, while sherry-laced cocktails include flamenco (Woodford Reserve bourbon, Manzanilla, peach liqueur, mint, lime and barley syrup). Away from Jerez,
a splendid range of gins yields the Londoner (Adnams First Rate, Noilly Prat, apricot liqueur and lime with egg white), and there are some surprising digestifs too. Savoury flavours encompass
croquetas, deep-fried olives with goats’ curd, smoked prawns, pork crackling and suchlike. Factor in impeccable service, and it seems The Sign of The Don can do no wrong.
