Occupying a 15th-century posting house on Guildford’s cobbled High Street, The Angel Dining Rooms is run as an independent neighbourhood restaurant focusing on seasonal British produce and foraged ingredients. Set in a converted ballroom on the first floor of the building, it combines opulent high ceilings, glorious coving and other period features with contemporary furnishings, intelligent lighting and a menu that is in tune with the times. Starters of Gloucester Old Spot pork rillettes with tomato jam and ‘pig sticks’ or a trio of Secrett’s beetroot could precede Cornish sea bass with crispy squid and rainbow chard or Shackleford lamb and wild garlic with summer pea hash, broad beans and Norbury Blue cheese crumb. There’s eight-hour bavette of beef too, while dessert might bring local strawberries with balsamic meringues or summer fruit crème brûlée with popping candy.
