A lot has happened to this iconic clifftop mansion since Lord Byron spent his honeymoon here back in the day. Chefs have come and gone, but the hotel has now entered a new era with the arrival of
moustachioed Baltic chef Martin Blunos. For something flexible head to Ozone – a brasserie-style eatery with floor-to-ceiling windows, a spherical outdoor terrace and a centrepiece cocktail bar.
The open kitchen sends out a user-friendly assortment of eclectic dishes mixing mainstream European ideas with pan-Asian flavours – from duck with kumquats, orange sauce and egg noodles to pork
sausages and mash with Thai shallot gravy. You can also graze on Lindisfarne oyster tempura, dip into one of the signature curries or play it straight with beer-battered coley, chips and spiced
mushy peas. If something more ambitious is required, try the hotel’s flagship restaurant, Blunos
