Ollie Dabbous (pictured) has revealed he is planning a follow-up to his self-titled Fitzrovia
smash hit, the current BMW Square Meal Restaurant of the Year.
The new site will be in London’s West End and, while it will offer an alternative to the nine-month wait at the chef’s original venture, it will not be a direct copy.
‘The second restaurant will inherit Dabbous’ core values – an upbeat atmosphere, friendly staff, value for money and a personalised aesthetic,’ Ollie told Square Meal. ‘The food will be simple and
pure, and there will be a separate cocktail bar with DJs, live music and a late licence.’
The news comes little over a year after Dabbous opened its doors to near-perfect reviews. This time,
second-in-command Ross Gibbens will take the helm.
‘Having worked with Ross for the past 18 months, I have complete confidence in him,’ said Ollie. ‘Obviously I will work on the dishes alongside him, but it’s important he enjoys a level of freedom
of expression.’
The chef hopes to launch his new venture by Christmas.
