The new site will be in London’s West End and, while it will offer an alternative to the nine-month wait at the chef’s original venture, it will not be a direct copy.

‘The second restaurant will inherit Dabbous’ core values – an upbeat atmosphere, friendly staff, value for money and a personalised aesthetic,’ Ollie told Square Meal. ‘The food will be simple and pure, and there will be a separate cocktail bar with DJs, live music and a late licence.’

The news comes little over a year after Dabbous opened its doors to near-perfect reviews. This time, second-in-command Ross Gibbens will take the helm.

‘Having worked with Ross for the past 18 months, I have complete confidence in him,’ said Ollie. ‘Obviously I will work on the dishes alongside him, but it’s important he enjoys a level of freedom of expression.’

The chef hopes to launch his new venture by Christmas.
