Trinity
chef Adam Byatt has been scouring south London in search of suitable premises for a second branch of Bistro
Union (pictured, right) – but so far, the ‘right’ site has proved elusive.
In July, the chef confirmed that he was on the lookout for somewhere to launch another Bistro Union. ‘The intention has always been to do more than one, but it would have to be in south London,’
he told Square Meal in an interview.
However, since then, the Dulwich site Byatt and his team were considering has fallen through, prompting the chef to consider other areas of south London.
‘The Dulwich site had a number of things wrong with it,’ said Byatt. ‘I’m still looking at premises, and although I can’t find the right one at the moment, I will do. I don’t have a deadline or a
problem to solve – we’ve got the right product on the table, so I’m just ready and waiting.’
