Born in Apinac, France, in 1950, Pierre Gagnaire grew up with restaurants, cooking at his father’s restaurant, Le Clos Fleury near Etienne, where he was responsible for maintaining its Michelin star. At 30, he launched his first eponymous restaurant in St Etienne where he gained a second star in 1986 and a third in 1993. After moving to Paris, Gagnaire had regained his three stars by 1998 for his restaurant in the Hotel Balzac. Together with restaurateur Mourad Mazouz, he launched Sketch in London in 2002 with Pascal Sanchez as its head chef. In January 2006, Sanchez was promoted to executive head chef and now oversees the Lecture Room and Library, the Gallery, the Glade and the Parlour. In 2005, Gagnaire opened an informal, mainly fish restaurant, Gaya, on Rue du Bac in Paris, which earned a Michelin star one year later.
