Summer truffle menu at Dego’ restaurant

The summer truffle, with its subtle scent and mild taste, is in season from late May to late August. To coincide with the summer truffle season, Dego’ has launched a four-course tasting menu featuring the delicacy, which will be available throughout July.

The tasting menu costs £78. Dishes include: calf’s liver escalope with tropea red onions and sweetcorn; homemade fettuccine with morel mushrooms; boned rabbit with veal-and-prune stuffing, steamed snow peas and tomato-gratin summer truffle; and homemade ice cream paired with summer truffle.

Shavings of truffle will also be offered as a garnish to à-la-carte dishes, at £4 per gram.
