Richard Corrigan cooks at Benares during chef season

Benares’ Michelin-starred chef Atul Kochhar has joined forces with some of the country’s top chefs to create a series of innovative dishes that will feature on the restaurant’s bar menu.

Modern Pantry chef Anna Hansen has already taken part in chef season; on 20 March, it’s the turn of Richard Corrigan (Corrigan’s Mayfair) to get cooking. Corrigan’s menu will include seasonal British dishes – all designed to share – including ballotine of quail with sweetmeats; goats-curd croquettes with wild garlic, beetroot, horseradish and dandelion; and the chef’s signature: mutton pie.

Corrigan’s dishes will sit alongside offerings from Kochhar such as apricot-stuffed tandoori cottage cheese in pickling marinade; and chilli-marinated tandoor-roasted cauliflower and chicken tikka with tangy onion salad.

Guests will be able to choose three dishes from the nine-strong menu for £21.

The chef season dishes will be complemented by the Mr Green cocktail (a mixture of Hendrick’s gin, fresh cucumber, fresh kiwi, kiwi schnapps, and elderflower liqueur).

The next chef to take to the kitchens of Benares will be Nahm’s David Thompson (16-29 April); then it’s the turn of Nigel Haworth from Northcote (3-16 May).
