Chef Shaun Rankin cooks at The Dorchester

From 14-19 May, Jersey-based chef Shaun Rankin will team up with The Grill at The Dorchester’s head chef Brian Hughson for a guest spell in the capital.

Rankin has long been a champion of Jersey produce, and London diners will get a taste of the menu at his Michelin-starred restaurant, Bohemia, during his residency at The Dorchester.

Channel-Island produce will dominate the menu, with new-season Jersey asparagus, Jersey Royal potatoes, lamb from Sark, and Fort Grey cheese from Guernsey. Rankin works these ingredients into cleverly unfussy dishes that place the emphasis firmly on purity of flavour, from savoury lamb with creamy goats’ cheese and minted peas contrasted with sweet Jersey honeycomb, to a masterful rhubarb-crumble soufflé.
