Italian cookery school La Cucina Caldesi is hosting a series of classes in summer and autumn 2008. Old favourites – such as the ‘Pasta and six sauces’ course and the 'Sunday night supper club' – make a popular return, while new additions include ‘A gourmet tour of Italy’, ‘Summertime in the Mediterranean’ and ‘Matching Italian food with wine.’ All courses encourage a hands-on approach and are informal and relaxed, often ending with a glass of wine to accompany the final tasting.

The school also hosts classes for children, teaching them how to create simple and nutritious meals in a fun way. There'll be a pasta-making workshop (10.30am-2.30pm on 10 August, £40 per person) and also a three-day summer course (14-16 July, £85 per day) specifically aimed at teenagers.

Highlights of the 2008 programme include:

The Italian Vegetarian (17 May, 10.30am-2pm, £95) Led by Jane Acton-Bond, this course isn’t just aimed at vegetarians, but at anyone looking to broaden their knowledge of cooking with fruit and vegetables. Dishes include risotto primavera.

Flavours from the Adriatic (18 June, 10.30am–2pm, £95) Franco Taruschio returns to La Cucina to show what the relatively undiscovered Adriatic has to offer in culinary terms – perhaps zucchini and olive cake, or a decadent truffle lasagne.

Gino Borella’s San Lorenzo Restaurant Secrets (20 June, 6.30-10pm, £130) Gino Borella was head chef at renowned San Lorenzo for over 30 years and, together with son Stefano and Giancarlo Caldesi, will re-create some of his signature dishes from this well-known restaurant.

Umbrian Farmhouse Cookery (11 September, 10.30am-2pm, £95) Ursula Ferrigno will prepare the very traditional dishes found in this area, with foods such as lentils of Castelluccio and rich meat stews – a perfect early Autumn course.
