RC (Roberto Costa) sold a restaurant chain in his native Italy before opening Macellaio (‘matcha-lie-yo’) RC South Kensington in 2012. Specialising in Fassone beef from Piedmont, this 60-day dry-aged beef is the star; from Italian-style tartare bound with Tuscan olive oil, to slices of bresaola with buffalo mozzarella. Elsewhere there are pasta options, as well as tarts, pizzas and focaccias available from the open-air bakery.
