Meaning ‘creation’ in Japanese, Soushi is the only restaurant & sushi bar of its kind in the Cotswolds – & it’s a good one, too. Situated on a trendy shopping lane in what was Cirencester’s old post office, it’s a slick, glass-fronted joint with an all-white interior & a pretty courtyard for summer dining. The whole set-up is the brainchild of three local friends, who spotted an obvious gap in the local market & recruited head chef Shinji Moroto to create a regularly changing eat-in or takeaway menu of authentic, made-to-order sushi, bento boxes & noodle dishes (from £5.50 a go). Expect friendly, knowledgeable staff, spanking fresh fish & a relaxed atmosphere.
